Made from Chardonnay grapes from the north of Spain and aged 12 months in French oak barrels where all the alcohol is transformed into acid while preserving all the other aromatics. Its soft acidity makes it a great vinegar for pickles, fish carpaccio vegetables, salads or marinating fish.
