The Meule de Savoie has a hard protective crust, and patinated, resulting from a regular brushing. This crust protects a light yellow paste, with a discreet nose, and with a typical flavor. The taste is buttery, sweet, slightly spicy. The cheese is not powerful but the flavors are frank. The dough is smooth and uniform, no or little alveolar. A real platter cheese that doesn’t have to blush in front of its Savoyard neighbors.
